Rather than chasing the novel for its own sake, every effort is put into exploring the ancient practices – drying, fermenting, salting and smoking. At Gem42 we follow the seasons and what they bring forth, transforming ancient culinary tradition into modern delicacies.Hence our motto "Tradition in Evolution"

Our Chefs have created a biodynamic vegetable garden, where the aromatic herbs/micro-herbs and vegetables are grown and used in the dishes of our menus.

At Gem42, you will be guided by our chefs who are on hand to present each dish. Please allow an average of 3 hours for the complete experience.
Our wine-pairing and fermented teas, are designed to highlight each dish, making sure to perfectly complement this experience.
