What we can offer, is what we learned from the past, where you take the best of cooking and keep improving using culinary vanguard approach and techniques that simply evaluate your perception of food. Some of the dishes are unique in flavours and culinary concept. We are living in an era where modern technology is bringing a revolution beyond any imagination. For modern society people eating, is no longer what satiates or keeps alive, but something that brings enjoyment to the senses. The excellent relationship we have built with suppliers and joint passion for their commitment to animal welfare and top quality produce are crucial to the high standards that we strive for.

All of our dishes/ingredients are researched and studied, sourced locally, tried and tasted in our dedicated Lab Test Kitchen, which is our space where to be creative.

Vision
Avant-gardes visual on produce, both coarse and fine, ancient and modern, always keeping an eye on sustainability, leaving the hills that bring forth the good fruit to flourish. Rather than chasing the novel for its own sake, every effort is put into exploring the ancient practices – drying, fermenting, salting and smoking. At 42 we follow the seasons and what they bring forth, transforming ancient culinary tradition into modern delicacies.

Our Chefs have created a biodynamic vegetable garden, where the aromatic herbs/micro-herbs and vegetables are grown, which are used in the dishes of our menus.
Our menus showcase modern Italian and French Cuisine.
At Gem42, you will be guided by our chefs who are on hand to present each dish. Please allow an average of 3 hours for the complete experience.
Our wine-pairing and fermented teas, is designed to highlight each dish, making sure to perfectly complement this experience.
