This pre-dessert is designed to provoke but also to stimulate your tastebuds. At its heart are bright, layered notes of Sorrento lemon and bergamot, softened by a smooth Chantilly cream & cactus leaves sorbetto.These delicate flavours are encased within a fragile, hand-crafted sugar and sherry vinegar sphere, designed to resemble a watchful eyeball. The shell provides a crisp, tangy crunch, but more than that, it is meant to be broken. In shattering the eye, you symbolically liberate yourself from the gaze of others.
